Gem Irons

No longer a long forgotten treat. The gem iron makes delicious ginger gems or even plain gems, which taste so good either on their own or with a little jam and cream.

Recipe

• 1 tablespoon butter

• 1/2 cup brown sugar

• 1 egg, lightly beaten

• 1 cup golden syrup

• 2 teaspoons ground ginger

• 1 teaspoon baking soda, dissolved in

• 1 cup milk

• 2 cups flour

Method

Preheat oven to 200 C.

Melt butter and sugar, mix in beaten egg. Add golden syrup and ginger and mix well. Mix in baking soda and milk alternately with flour, gently mixing.

Pour into hot gem irons and bake for 10 minutes or until gems spring back when lightly touched.
